Pungent foods are often stimulating, warming, and drying. Their diffusive qualities break through stagnation and bring energy and heat from the core to the periphery.

Stimulating digestive aids: Especially for those with a cold, slow digestion. This could include bloating and mucosal discharge. Examples include black pepper, cumin, coriander


Stimulating diaphoretics: These are used at the beginning stages of a fever, when someone has chills and feels cold. These herbs warm the core and spread the warmth to the surface - helping an person to "sweat it out." Examples include cayenne, ginger


Stimulating expectorant: For congested mucous during a cold or flu. These herbs can thin the mucous and increase secretions. Mucous is a beneficial immune system response, but we never want it to pool or stagnate. These herbs keep things moving. Examples include elecampane, ginger, grindelia


Stimulating diuretic: To increases urination, most often used during UTI infections - especially with cold symptoms. These herbs are often anti-microbial as well. Example: juniper berries



Ayurveda Elements
In Ayurveda the pungent taste is associated with Fire and Wind. This makes them hot, dry and light. Pungent herbs decrease kapha and vata and increase pitta. 

TCM Organs
The organ associated with the pungent taste are the Lungs and Large Intestine. Pungent herbs are warming and drying give them yang qualities. 

Chemical understanding
Many pungent herbs contain essential oils and resins

Contraindications
Pungent herbs may be contraindicated for heat, dryness, burning sensations
